Strawberry Dessert

This is the dessert that I served at Book Group.  I love this dessert because it is light, but so delicious!

Strawberry Dessert

1 c. flour

1/4 c. brown sugar

1/2 c. margarine

1/2 c. chopped walnuts

Mix and spread on cookie sheet. Brown at 350 for 6-8 min. Stir while baking. Cool.

1 1/2-2 c. partially thawed strawberries

2 egg whites

1 c. sugar or Splenda

1 T. lemon juice

1 t. vanilla

Mix, then add 1 c. whipped cream.

Spread 1/2 of crust mixture in bottom of 9x13 pan. Add filling, then rest of crust, Freeze.

That’s it!  Simple!  And when you use Splenda and fat free whipped cream, it’s not too hard on your hips either!  Kattie loved it!

Cinnamon Rolls

Oh, how I love my cinnamon rolls!  They are so easy and yummy!

BBQ Chicken Pasta

This was really yummy! I highly recommend it. I love My Kitchen Cafe. You can see the pictures of this dish here (I neglected to take any).


1 tablespoon extra-virgin olive oil


2 boneless skinless chicken breasts, cut into bite-size chunks

1 red onion, diced

3 cups water

2 1/2 cups chicken broth

1/2 teaspoon salt

12 ounces penne pasta

2/3 cup barbecue sauce

1/3 cup sour cream

1/2 cup shredded mozzarella cheese

1/2 cup shredded sharp cheddar cheese



In a large 12-inch nonstick skillet heat the olive oil over medium heat (you could also use a large pot if you don’t have a skillet this big). When hot, add the chicken and onions and saute, stirring occasionally, until the chicken is browned and cooked through. Remove the chicken and onions to a plate and set aside.



In the same skillet, add the water, chicken broth, penne and salt. Bring to a boil and simmer for 12 to 15 minutes, until the liquid is almost absorbed, the pasta is tender and the mixture is thick and syrupy. Stir in the barbecue sauce and sour cream. Once mixed, add in the reserved chicken, onions and shredded cheese. Stir to combine and cook until everything is heated through.



Serve immediately and garnish with additional red or green onions and shredded cheese.

Chocolate-Chip Cream Cheese Brownies

1 German Chocolate Cake Mix
All ingredients to make the batter per box directions

1 package cream cheese
1 bag chocolate chips
1 egg
1/2 cup sugar

Once the cake mix batter is made, pour into sprayed cookie sheet and set aside. Mix cream cheese, egg, and 1/2 cup sugar. Fold in a little less then 1/2 the bag of chocolate chips. Drop cream cheese mix by the spoonfuls onto the cake batter and swirl around with fork. Set aside 1/3 cup chocolate chips and sprinkle the rest on top of the batter. Bake at 350 for 25-30 min. until cake springs back into place when pushed slightly with finger. When the time is almost up, melt the remaining 1/3 cup chips. Drizzle with a fork on top of the baked cake.

Cinnamon Rolls

So I made cinnamon rolls today.  I love them.  I have THE EASIEST RECIPE!!!!!  But I simply cannot take pictures while I am making them.  It would take way too much time because I would be washing my hands all the time.

So I have a suggestion...

If would like to learn how to make them, I would love to teach you.  My only request is that you take the pictures while we are making them.  Then we can post the recipe and pictures here.

So call me and let's make cinnamon rolls!

More Granola


Maybe it's just the season for Granola, but my boys have wanted this for a long time and I finally got Cheerios on sale this week at Winco (.98 a box- Wahoo!)
I grew up on this granola. When I think of childhood memories and yummy food this is one that I will always remember. This isn't a crunchy granola. We eat it either plain, on yogurt, or mostly just pour milk on top and eat it like cereal. Yields over 15 cups.

10 cups oats
4 cups Cheerios
3/4 cup packed brown sugar
3/4 cup honey
1 1/4 cups vegetable oil
1/2 tsp salt

Mix well in a big bowl and heat in 350 oven for 10 min. Stir and heat another 5 min. Let cool and transfer to plastic containers.

You can add any dried fruit and a little less sugar, but I didn't have any this time so it's going to be plain.
